MEET THE CHEF: HIROAKI OOI

Nice to meet you. My name is Ooi,  sushi chef. I had trained myself as a sushi chef for 14 years at Ooi Sushi. Ooi Sushi is one of the oldest Sushi restaurants in Hiroshima. It has been in business for 60 years. The taste handed down from my grandfather's generation is widely loved by the locals and the restaurant is always crowded with local lovers.

While I was working there, I attained a sincere attitude for making sushi. I learned the importance of putting effort into each dish, doing my best to please the customers, and cooking with all my heart. 

Nowadays, sushi has spread all over the world, and each region has created its unique sushi. In Japan as well, conveyor-belt sushi restaurants have become standard to make it easier for people to enjoy sushi. However, I would like to bring the traditional Japanese style of sushi that I learned at Ooi Sushi, a restaurant with a long history, to the Netherlands. I do hope that everyone in the Netherlands will enjoy my sushi that I have put my heart and soul into.

Japanese Culinary Experience

Chef HIRO provides you the special entertainment through sushi or Kaiseki courses to enjoy the pure Japanese culinary experience in the comfort of your home.

Kaiseki is a traditional multi-course Japanese dinner that is often served for some special events. 

With Chef HIRO, Kaiseki-Sushi course includes Sakizuke, Appetizer, Japanese style Omlet, Grilled dish, Omakase Sushi, and Dessert. Kaiseki-Sushi Celebration course includes dishes from Kaiseki Sushi course and additional dishes in response to customers' requests such as sashimi, tempura, and Wagyu (Japanese beef).

We also prepared two courses including ONLY Sushi. If you are a big sushi lover, this is for you. 

Any Japanese Culinary Experience with Chef HIRO is that Chef HIRO comes to your selected location, and cook and serve them to you with Japanese tableware. 

Okonomiyaki

Hiroshima-style Okonomiyaki 

It is another recipe that I inherited from my grandfather who owned an okonomiyaki restaurant for 19 years in the Hiroshima Station.

I also worked with a spatula in both hands there.  Since the restaurant was located in Hiroshima Station, there were many customers from all over Japan and abroad, and I felt that okonomiyaki was one of the cuisines that could be popular worldwide. Due to the renovation of Hiroshima Station, Okonomiyaki Ooi has already closed, but I am proud of having learned the okonomiyaki recipe there, even before I attained how to make sushi. Okonomiyaki has diverse regional recipes. Especially, my recipe is completely different from the Kansai style in the way it is cooked, seasoned, and the way the ingredients are cut. Hiroshima's okonomiyaki is usually cooked with layers of dough, cabbage, and other vegetables, meat, eggs, and soba noodles. This makes it possible to delicately feel the sweetness and flavor of the ingredients.

 I'm making this Hiroshima-style Okonomiyaki with a griddle from Japan and a spatula from Hiroshima.
